For example, on Choco Island 2, you want to use Wendy if you have it. The reason for this is that you are hoping to hit a coin frenzy by allowing yourself to accumulate them as quickly as possible.
If you want, you can combine courses and drivers for a chance to win a Money Frenzy in any race, which should get you close to the 50 coins you need. You just have to choose your course, then launch it several times in 50cc to know precisely where all the parts are located and to maximize the number you can collect.
